RECIPES: PERUVIAN CEVICHE AND LECHE DE TIGRE

Do you love to eat sea food? Do you like to try new foods? These two recipes will be perfect to try! Peruvian Ceviche and the Tiger's Milk are the most popular Peruvian dishes in the world. With the fusion of lemon, chili and other ingredients, it will make the flavors delicious and majestic for your appetite. Don't lose out on the amazing experience of new flavor. Below are the recipes:



PERUVIAN CEVICHE

2 uncooked fish fillets (I use tilapia, but any white fish will do)
1/2 cup of fresh lemon juice
2 tsp. Peruvian Yellow Pepper (chopped)
1 tbsp. Rocoto Chilli Paste
2 small pieces of ginger
2 1/2 tbsp. of celery
Half of a chopped red onion
Half of a garlic clove
3 stems of cilantro
black pepper and salt


Cut the fish in cubes, add the fish in a cold metal bowel with half of the Rocoto Chili Paste. Add celery, black pepper and salt, blend softly and let rest for 2 minutes.


Blend lemon, ginger, garlic, cilantro, other half of the Rocoto Chili Paste, black pepper, and salt. Empty into the metal bowel with the fish and add the red onion if you want.  Let rest 5-7 minutes, the acids from the lemon juice will cook the fish. Serve with cooked sweet potatoes and lettuce.



LECHE DE TIGRE (Tiger's Milk)

1 uncooked fish fillet (I use tilapia, but any white fish is fine)
1/2 cup of fresh lemon juice
1 tsp. Peruvian Yellow Pepper (chopped)
1tbsp. Rocoto Chilli Paste
2 small pieces of ginger
2 1/2 tbsp. of celery
5 cooked shrimp
1/4 cup of cooked mixed sea food
1/4 cup of sea food broth
2 stems of cilantro
1/4 cup evaporated milk
black pepper and salt.


Cut the fish in cubes and add to a blender with the lemon, celery, Rocoto Chili Paste, cilantro, garlic, ginger, sea food broth, evaporated milk, salt and black pepper. Blend for 5 seconds, 2 times. Serve with cooked sweet potatoes and lettuce.
